Sure I would, but that depends on the nature of our "relationship" and how we choose to display that. Some people are comfortable with showing that level of affection, whether it be in public or privately, whereas certain people believe that such forms of affection are reserved for more serious or "committed" relationships.
If our chemistry & connection feels more like a boyfriend/girlfriend relationship, then it would only be natural to express that by holding hands or touching (like couples do). But if this FWB is more of a business with a "supply & demand" mechanic to it, then hand holding probably wouldn't happen.
